*I do not eat much salmon, but thought someone might be interested in this recipe...
MARINADE
1 tablespoon tequila, if desired
2 teaspoons lime juice
2 teaspoons olive oil
1 teaspoon salt
1 teaspoon paprika
1/8 teaspoon cayenne pepper
SALMON
4 (6-oz.) salmon fillets, skin on
1. Combine all marinade ingredients in small bowl. Place salmon in shallow baking dish; generously brush with marinade. Cover and refrigerate at least 1 hour or up to 3 hours.
2. Heat grill. Grill salmon, covered, over medium heat or coals 8 to 10 minutes or until salmon just begins to flake, turning once.
